WIN A SALAMI MAKING COURSE FOR TWO!

Fancy yourself a budding butcher and want to sharpen your skills? We have just the prize for you and a friend! This month we’ve teamed up with the Hampshire Salami Company to offer a Salami Making course for two people.

The full-day class is very hands on, covering all aspects of butchery, meat and curing. You’ll learn how to break down an entire pig into cuts including the shoulder, loin and belly and legs, as well as the key principles of salami making. This includes cutting, casings, seasonings, fermentation, and maturing, as well as making a number of different salami including calabrese, finocchiona, and Milanese. You’ll also learn how to prepare whole muscle cuts for curing including prosciutto crudo (Parma style cured ham), pancetta, capocollo and lonza.
