Quick Garlic, Cheese & Chive Scones

These speedy scones are great as a quick lunch served with carved ham and cheese, or served straight from the oven with extra garlic butter spread on. Try adding Cheddar and English mustard for extra flavour

  • 225g self-raising flour
  • Pinch salt
  • 1 tsp baking powder
  • 50g butter, diced
  • 1 garlic clove, minced
  • ½ x 25g pack chives, chopped
  • 50g Gruyère cheese, grated
  • 150ml semi-skimmed milk

Preheat the oven to 200°C, gas mark 6. Mix the flour, salt and baking powder in a bowl. Mix the butter with the garlic.

Rub the garlic butter into the dry mix to resemble breadcrumbs. Stir in the chives and cheese.

Gradually blend in the milk to give a soft dough. Roll out on a floured surface to 2cm thick. Using a 6cm round cutter, cut out 8 buns and place on a baking tray. Brush with milk and bake for 10 minutes until risen and golden.
