Lamb, Apricot & Coriander Burgers

This awesome lamb burger is flavoured with dried apricots and finely chopped pistachios, giving it an intriguing flavour profile. It tastes amazing cooked on the outdoor grill and served with chutney between soft hamburger buns. A burger recipe you'll keep coming back to!

Ingredients
450g ground lamb
25g dried apricots, finely chopped
25g shelled pistachio nuts or almonds, finely chopped (optional)
1 tbsp freshly chopped coriander or mint
Grated zest and juice of 1/2 lemon
Salt and freshly milled black pepper

Method
In a large bowl, mix together your ground lamb with the finely chopped herbs, nuts and apricots.
Using slightly damp hands, divide the mixture into four. Make each amount into a burger shape. Each burger shape should have around a 9cm diameter. Cover and chill in the fridge for 20 minutes.
Grill burgers on a prepared barbecue or preheated moderate grill for 5-7 minutes on each side until cooked and any meat juices run clear.
Serve your lamb burger in brioche hamburger buns with a salad garnish and a selection of relishes.
