Griddled Apple & Parma Ham Open Sandwiches with Watercress

These speedy little open sandwiches are jam-packed with flavour - perfect for a quick but satisfying lunch

Serves 2
Ingredients
1 Gala Apple, core removed and sliced
Rapeseed or olive oil
2 tsps honey
4 slices rye bread
4 slices Parma ham
40g watercress
Method
Toss the apple slices in a little olive oil and honey. Heat a griddle pan until smoking hot and griddle the apples until strong lines appear on both sides
Lightly toast the rye bread and top each slice with griddled apples, Parma ham and watercress. Drizzle with a little olive oil to serve
