Honey is a very special ingredient. One that we really celebrate at the Great British Food Awards – particularly artisanal, small batch, ‘real’ honey from producers who care about their hives. What they put into jars is infinitely different to mass market, blended commodity honey – where sugar syrups are often added to bulk them out!

Buying better and using a quality honey in these aromatic, gorgeous, teddy-shaped biscuits will make all the difference to their flavour. They’re a really special treat.
Ingredients (makes several)
- 115g unsalted butter at room temperature
- 75g caster sugar
- 60g light brown sugar
- 1 medium egg yolk
- 160g runny honey
- 320g plain flour
- 1 tsp bicarbonate of soda
- Large pinch sea salt
Method
1. Beat together the butter and sugars until soft and creamy. Add the egg, honey and a little of the flour and mix together briefly. Blend in the rest of the flour, the bicarbonate of soda and salt. Flatten the mixture a bit (which will help with the rolling later on), wrap well, and chill in the fridge for 30 minutes to 1 hour.
2. Preheat your oven to 180C and line a couple of baking sheets. Cut the dough in half and roll one half on a floured surface to just under 1cm thick. Cut into the shapes you want (we like honey pots, bears and bees). Repeat with the remaining dough.
3. Spread out well on your prepared sheets, and bake for 12-15 minutes until they start to turn golden at the edges. Allow to cool completely on a rack before dunking into a nice hot cuppa.
